You have definitely heard of matcha powder by now, and if you're a bit confused about how to use the energizing Japanese powder in your health routine other than in tea, here are five recipes that show you how! If you need more convincing, just know that matcha powder has been used for ages in Japan, has a very high level of antioxidants, is a major metabolism booster, and is said to boost concentration and energy levels!
Not only am I sharing another healthy recipe (well, as healthy as cocktails get), but it’s also GREEN! I’m so excited to share this Matcha Colada cocktail with you because it is just so tasty and refreshing and definitely won’t weigh you down like a Guinness milkshake or an Irish Car Bomb. You feelin’ me here? I’m all about creating fun holiday recipes with a healthy twist. That way we get to celebrate without completely regretting it the next day (everything in moderation folks! Keyword = BALANCE.)
So, if you have even glanced at Instagram or scrolled through any sort of lifestyle/food social media accounts in the past few months, you must know that matcha lattes are the new super-hip and trendy “of the moment” coffee shop drink.
It got me thinking, we obviously all dig matcha mixed with some sort of milk (cow’s milk, almond milk, cashew milk, COCONUT milk, you name it!) so why not take a classic milk-based cocktail and give it a little matcha spin? My personal favorite milk-based cocktail is a White Russian, but I felt like a matcha-based milk cocktail needed more of a tropical twist.
Instead of regular milk or cream, I went for good ol’ coconut milk (duh…coco is a go-go for all things tropical.) And instead of vodka, I decided to throw in some white rum (my little Mai Tai-loving influence there.) Of course we need some matcha powder (which you can find here) and then, to give this Matcha Colada just a little extra “oomph,” we throw in some Grand Marnier. How’s this all sounding so far? If you ask me, it’s super easy and incredibly delicious, so you should definitely go about mixing yourself up some of these next week (and maybe this weekend for practice? Practice makes perfect!)
Recipe: Makes 1 or 2 cocktails
A healthy, refreshing coconut milk-based matcha cocktail perfect for celebrating Health!
In a cocktail shaker or large glass, vigorously stir together rum, coconut beverage and matcha powder. If you have one of those fancy matcha whisks, use that! (I don’t so had to use a fork.) Pour in Grand Marnier and stir again.
Fill a rocks glass about halfway to three-quarters full of ice. Holding a small sieve over the glass, pour in the matcha mixture. This will help catch any large chunks of the matcha powder that did not get blended in. Enjoy immediately for best flavor!
Matcha Magic Custard Cake

1 cup plain/all-purpose flour
1-2 tbsp matcha powder (Japanese green tea powder), you can adjust to taste
113g (1/2 cup) butter
2 cups (500ml) milk
4 eggs, separated and at room temp
4 drops white vinegar
1 1/2 cups pure icing (confectioner's) sugar
1 Tablespoon Water
To dust: 2 tbsp icing (confectioner's) sugar + 1 tsp matcha powder, sifted together
Preheat the oven to 160°C(325°F). Grease and line a 20cm (8 inch) square baking pan/dish with baking paper.
Sift flour and matcha powder together in a medium bowl. (I like my matcha flavor very strong so if you prefer it milder then only use 1 tbsp of powder)
Melt the butter and set aside to slightly cool. Warm the milk to lukewarm and set aside.
In a large mixing bowl, whip the egg whites and vinegar to stiff peaks with an electric mixer. Set aside.
In a separate large mixing bowl beat the egg yolks and sugar until light with an electric mixer. Mix in the melted butter and the tablespoon of water for about 2 minutes or until evenly incorporated.
Using a hand whisk, mix in the flour until evenly incorporated. Slowly hand whisk in the milk and until everything is well mixed.
Fold in the egg whites with your hand whisk, 1/3 at a time. Repeat until all of the egg whites are folded in. The egg whites will appear curdled and lumpy at first but keep gently mixing with your whisk until all the larger lumps are incorporated.
Pour the batter into the prepared pan and bake for 40-50 minutes or until the top is golden. (Take care not to overbake, middle should still be a bit wobbly) Allow cake to completely cool (you can place it in the fridge after 15 minutes to cool it quicker) before cutting and then dust with icing sugar/matcha mixture.
iced matcha green tea latte

Serves 1 = INGREDIENTS
1 teaspoon matcha green tea powder
1 cup Almond Breeze Almond Milk Unsweetened Vanilla
1-2 teaspoons agave or honey (more to taste)
In a glass or mason jar, mix the matcha green tea powder with a little bit of water - just enough to form a paste. Stir it up until there are no clumps.
Add the milk and and agave. Cover with a tight-fitting lid and shake vigorously until incorporated. Let sit for a minute so any remaining clumps settle to the bottom. Carefully pour into a glass with ice and enjoy!
NOTES: If you have a mesh strainer, you can also pour the matcha latte through it to remove clumps. I am usually too lazy to get it out in the morning which is why I just let it settle for a second and then pour carefully enough so that the little clumps just stay put in the bottom of the jar.
